Stuffed aubergines with goats cheese

Recently my wife went on to a healthy diet and I came up with this simple vegetarian recipe with plenty of taste and character. You actually get two dishes from one. So here it is.
You will need:
Two aubergines, one for every person
4 tomatoes
1 onion
Coriander 80g
Hand full of walnuts
3 cloves of garlic
Goats cheese (about 50g)
3 tbl spoons of olive oil
Tiny bit of sea salt
Black pepper
Take the skin off the tomatoes. To do that make a few small cuts on tomatoes and pour boiling water on them and the skin comes of quite nicely without much effort. Chop finely the onion and fry with olive oil until golden then add the chopped tomatoes. Fry together on a slow heat until becomes a paste (around 15 minutes).
While making the paste, cut the aubergines in halves (long) scoop out aubergine flesh and leave it in a separate bowl. That will be the base for the second dish.
When the tomato paste is ready, spread evenly inside the aubergines. Chop the garlic and the coriander. Use half of garlic and half of coriander and put it on top of the paste. Sprinkle the walnuts, pepper and a bit of salt on top. Cover with goats cheese slices. And the final bit - just put it to the oven for about 15-20 minutes on 180c.
The second dish is very simple as well. Chop the aubergine flesh and start frying with some olive oil. Fry for about 10-15 minutes on a medium heat. 2 minutes before the end add the coriander and the rest of garlic. Switch off and let it stand covered for around 5 min. Then serve together with already made aubergines.
